I’ve been talking a lot about finding the space…and time to do things that make me happy.
It’s easy to get caught up in the hustle and bustle of a busy fall season no matter what industry one works in. With kids going back to school and fall sports in full swing, everything just feels busier at this time of year.
That being said, I have been making a concerted effort to stop and soak in the good stuff.
I’ve also been focusing on making choices that support rest & recovery, healthy eating, exercise and time with family & friends. This weekend was one of the last full weekends I will have off for a while with our home events beginning at UNH. And I was fortunate enough to have some time to do something I have always enjoyed a great deal: Cook!
I rolled my sleeves up and decided to cook a few of my favorite recipes and I even tried my hand at making “clean” (i.e. healthy) pumpkin spice cupcakes as a treat for my husband who had been installing a wood floor all weekend long.
In the middle of the pots and pans and kitchen creations, I remembered how much I love to cook…and also that I am pretty darn good at it too!
So, that spurred another idea:
